Chicken in a Peanut Sauce

Easy

Red pepper, and onions are tossed with strips of cooked chicken and noodles, then dressed with an Asian-inspired blend of peanut butter, soy sauce, sesame oil, garlic and ginger.
  Ready in 25 mins
Ingredients
Serves: 6
•   Udon noodles
•   1 1/2 tablespoons vegetable oil, divided
•   1 red pepper, julienned
•   onions, chopped
•   500g (1 lb) chicken breast fillets, cut into cubes
•   140g (5 oz) smooth peanut butter
•   2 tablespoons soy sauce
•   2 tablespoons sesame oil
•   1 teaspoon grated fresh ginger
•   1 teaspoon garlic
•   2 tablespoons brown sugar

Preparation method
Prep: 10 mins | Cook: 15 mins

Cook noodles according to packet instructions.

Sauté chicken in hot wok.

When chicken is done and juices run clear, set aside.

Sauté red pepper and onion in the wok until tender yet still crunchy and then add the cooked chicken. Set aside.

In another pot mix peanut butter, soy sauce, sesame oil, brown sugar, garlic and ginger in a large saucepan over medium low heat. Add water to thin down if required.

Drain and place Udon noodles in the bottom of a deep plate.

Place chicken, pepper and onion on top.

Pour peanut sauce over the chicken etc.

Not for the weightwatchers among us but very tasty.
