Cured Trout fillets with Soy Sauce and Honey

Here's a great wee trout recipe. I brined 2 fillets ready for the smoker but it's blowing a gale outside so I couldn't get ole smokey going.
So I cooked the cured fillets in soy sauce and honey.

Prepare a brine by adding salt to cold water in a non-metalic bowl. Mix in salt until it will float a tattie.
Brine the trout for 2 hours then rinse and pat dry with kitchen roll.
Leave the fillets to dry overnight in the fridge. The trout will 'firm up' and the pedacle will form on the surface (slightly sticky film).

Add a good shake of light soy sauce to the fillets then paste a tablespoon of clear honey on to each one.

Then a twist or 3 of the peppermill then in the oven at 160 for 30 minutes.

Tastes superb! A really tasty way to prepare trout. The cured fish is firm (but not dry).

I meant to say, put the fillets in foil one on top of the other with the skin facing outwards- like a sandwich.
You don't want to cook it on too high a temp because any honey that leaks out of the foil might burn on the oven tray.
