make your own smoke box for lovelly smoked fish

make a simple box 5 sheets of ply wood lid felted to keep box dry . nail the other four pieces together with 2by2 to strenghin box.place slab under box for tray to sit on, simple box complete.for the fire you will need ,tin tray about 2 inch deep place bottle in middle of tray place wood shavings aroud bottle so its about 4inch deep .tray should be about 2half feetwide sorry the box is about 4feet high 3 feet wide :( after placing shavings sprinkle saw dust over the shavings until coverd .the pickle 3bottles of water place smallish potato in water add rock salt keep adding till the potato floats .pickle ready . :D add two tins of real ale  ,agood glass of whisky or brandy ,melttwo spoons of brown sugar .then add your already cleaned fish if filleted yous ahard wire mesh tray acouple of nails foot down inside your box place tray give it slight grease just to stop fish sticking ,if tying fish from the tail put your mesh further down the box depending of the size of fish this will save any that fall of the string. sprinkle water over sawdust  fine spray remove bottle ,light fire small bits of paper when fires goingshavings are well lit smother fire so just smoking place on slab under your box place lid should smoke for6 or8 hours leave over night inbox the next day they should be nice and firm.sorry keep fish in pickle for about an hour again depending onsize of fish less for smaller ones. wee tip if hanging them from tail place a cocktail stick in the belly tokeep it open for agood smoke :lol:cooking place in hot oven for about 20 minutes serve cold with salad superb :lol:

nice one waterbouy, gathering  all necessary equipment to begin building my own. im sure it my fish will taste better know.
