Has anyone heard of or have an idea how to souse trout fillets - something a bit like roll mops with mackarel or herring?
I am quite keen to give it a try as this is one way of eating oily fish I really enjoy and very good for you I suppose.

I'm sure there is a receipe forsouced/pickled ish in the River Cotage Fish Book o which I own a copy, however it is in storage just now.
Im sure other foum members wil have same book, if not when I gt mine back i'll let you know

Sounds like a good use of a couple of "harpo" sized trouts :D

Sandy, I cooked some orkney trout for the boys on the fishing trip earlier in the month. I dry-cured the fillets in salt then marinaded them in the pickling mixture from a tub of Orkney rollmop herring. Then I added the cured fillets and the last of the pickle to a large pirex dish with red peppers and onions and roasted them in the oven. Served the fillets with a hollandaise sauce and chips from the chipper in Stromness. Orkney cheese and Orkney oatcakes followed. Finished with Orkney ice cream and a drap of hieland park! Perfect! Not many food miles there!

There sure is some fine grub to be had from the local produce in orkney. They seem to have been very good at getting into the supermarkets as well. As Dod would say nothing like the fruits of the land :).
