Title: Trout With Irish Style Cream & Honey Sauce

This recipe works well with  salmon as well as large torut. I have often used bigger trout caught on the Don while  spinning for salmon at the back end.

Ingredients
500g trout fillets
2 ts honey
100 g butter
100 g whole almonds, skinned
8 tb fresh heavy cream
2 tb lemon juice
200 g flour (seasoned to taste)
600 ml milk (to soak trout in)

Preparation
Chop  the almonds up fiine.Wash and dry the fish  in a clean towel then
soak in milk for 10 minutes. Toss the fish  in the seasoned four. Melt half the
butter in a frying pan, then gently fry the fish in it for 5 minutes or so  on each
side. Make the sauce by melting the rest of the butter, add and saute  the
chopped almonds.. Add the honey, lemon juice,  bring carefully to simmering, and add the cream last, making sure the temperature is low enough so it won't curdle.
Pour over the fish, and serve with lemon and a fresh salad.

Thank you Claretbumble!  There is certainly a place for c+eat as well as c+r.  The Irish recipe is appropriate!  :D
