as far as I know it means,

"A trout in the pot is better than a salmon in the sea"

It is an old Irish proverb.

I have no idea where it came from. I was clearing up a load of stuff, as wives make you do at this time of year, and came across a piece of paper with it written on

[Fishtales]

'Dinne chap yon bonnie troot oan the heid'

Translates to ' Return that beautiful trout carefully and ensure quality sport for generations to come'

Unless of course it is for lunch/dinner because you didn't bring enough to eat for five days in the middle of nowhere (been there)
